Ingredients
- ½ tsp cumin
- ½ tsp cinnamon
- 2 tbsp orange juice
- 1 ½ tsp red wine vinegar
- 2 tbsp Molé paste
- 5 tbsp chilli oil
- 3 cups cooked quinoa
- 20 gm chopped cilantro fresh
- Salt – to taste
- 2 green onions (thinly sliced)
- 1 cup black beans (boiled)
- 7 cherry tomato (halved)
- Iceburg lettuce
Procedure
- Combine first cumin, cinnamon, orange juice, red wine, salt, vinegar, Molé paste in a small bowl and slowly add chilli oil, whisking as you pour.
- Combine quinoa, tomato, onions, black beans, and cilantro. Add vinaigrette mix toss to coat. Add lettuce & toss to combine.
