Layered Cake with Dulce de Leche cream

Ingredients

Chocolate cake layers

  • 1½ cups all-purpose flour
  • ¾ cups cocoa powder
  • ½ tsp baking soda
  • 1 tsp baking powder
  • ¾ cup vegetable oil
  • 1½ cups sugar
  • 2 eggs
  • ½ tsp vanilla extract
  • ¾ cup butter milk
  • A pinch of salt

Vanilla cake layer

  • 1 cup all-purpose flour
  • 2 tsps baking powder
  • 1 pinch of salt
  • ¾ cup vegetable oil
  • 1 cup castor sugar
  • 2 eggs or 1 cup yogurt
  • ¾ cup milk
  • 1 tbsp vanilla extract

Dulce de leche cream

  • 1 cup heavy cream
  • 2 tablespoon Sprig Dulce de Leche

Directions

Chocolate cake layers

  • Pre-heat the oven to 180oC. Brush two 9″ tart tins with melted butter using a pastry brush
  • Whisk cocoa, flour, salt, baking soda and baking powder into a bowl
  • In a large bowl, mix cream, oil and sugar
  • Add eggs, one at a time and mix well after each addition
  • Beat in vanilla extract using mixer at low
  • Add the flour mixture to the wet ingredients alternating with butter milk, starting and ending with flour mixture. Beat until smooth
  • Pour the batter into 2 tins and smoothen the top using a spatula
  • Bake at 180oC until a toothpick inserted in the centre comes out clean

Vanilla cake layer

  • Pre-heat the oven to 180oC. Brush a 9″ tart tin with melted butter using a pastry brush
  • In a medium bowl, whisk flour, baking powder, salt
  • In a large bowl, using an electric mixer, beat oil and sugar until light and pale
  • With mixer on low, beat in eggs one at a time
  • Add vanilla extract and mix well
  • Alternately, beat in flour mixture and milk, beginning and ending with flour mixture. Mix just until combined
  • Pour half the batter into the tin and smoothen the top using a spatula. The other half of batter can be saved for later.
  • Bake at 180oC until an inserted toothpick comes out clean. It should take about 30-32 minute

Layered Cake

  • Mix well the dulce de leche into the heavy cream
  • For a thicker filling, whip the heavy cream until stiff peaks form. Fold in the dulce de leche
  • Use cream to fill the layers, alternate chocolate and vanilla layers
  • Top off the cake with Chocolate bars, macaroons, pretzels and caramel popcorn
