Ingredients
For Chicken Tortillas
- 1 boneless chicken breast piece
- 1 tbsp olive oil
- 1 tsp cumin powder
- ½ tsp garlic paste
- 1 tsp Sprig Tangier spice blend
- ¼ tsp salt
- ¼ tsp pepper
- ½ tbsp lemon juice
For stuffing
- ½ cup yellow bell pepper
- ½ cup red bell pepper
- ½ cup mushrooms
- ½-1 cup grated cheese
- Salt and pepper to taste
Directions
For Chicken Tortillas
- Start by preparing the marinade for the chicken
- Take a bowl and add olive oil, cumin powder, garlic paste, Sprig Tangier spice blend, salt, pepper and lemon juice according to the mentioned measurements; you can add more of the Sprig Tangier spice blend for a heavier earthy flavour
- After preparing the marinade, clean the chicken breast piece properly
- Slice the breast piece horizontally into thin strips (it’s not an easy task, make sure to use a sharp knife for the process)
- Apply the marinade to each piece on both sides and set it aside for at least 30 minutes; meanwhile prepare the veggie stuffing
For stuffing
- Chop the peppers into small cubes
- Clean the mushrooms to make sure it is rid of any dirt
- Chop the mushrooms into small cubes
- Add all the chopped veggies to a bowl
- Add grated cheese according to your preference; for a decently cheesy filling ½ cup of cheese is enough; you can add more according to your preference (it is suggested not to add more than 1 cup as it may not be possible to stuff the chicken too much)
- Stuff each marinated chicken slice with the veggie stuffing; roll it up and secure it with a toothpick
- Heat 1 tbsp oil on a non-stick pan
- Place the chicken rollups seam side down (so they do not open); fry till golden brown
- Remove from the gas and keep it aside; your dish is ready
- On removing the toothpicks, the chicken rollup might fall apart, so keep them intact
- Serve with a green salad and a dip or ketchup and it’s good to go as a perfect party snack
