Ginger Teriyaki Glazed Hot Chicken Wings

Ingredients
For Marination.
- 500gms Chicken wings
- 2 tbsps. Soya sauce
- 1tbsp Chilly Vinegar
- 4 tbsp Teriyaki sauce
- 1 tbsp Light olive oil
- 6 to 8 cloves of garlic very finely chopped
- 4 to 5 Green chillies slit
For Glazing the wings.
- 2 tbsp. of olive oil
- 1tbsp of butter
- 4 tbsp. of teriyaki sauce
- 1 tbsp. of honey
- 1/2t tbsp. hot sauce like habanero/bhut jolokia.
- ½ teaspoon of corn flour mixed with1/ 4th cup of warm water.
Instructions
- Mix all the ingredients in a bowl except for the chicken. Check for seasoning, add salt if required.
- Add the chicken wings one by one ensuring that all the wings are well coated with the marinade.
- Let it rest in the fridge for atleast 2hrs.
- Once the chicken has rested, heat a non-stick pan. Also in the meantime heat the oven to 180 degrees.
- Add 2 tbsps. of oil in a pan. Add the chicken wing to caramelize it, 2 to 3 mins on both side on high heat. Don’t discard the marinade, we shall use it later.
- Coat a baking tray with oil and transfer the caramelized chicken wings into it. Seal it with an aluminium foil and cook it at 220 degrees for atleast 45mins in the middle rack.
- Once the chicken is cooked, drain the juices and also strain the marinate that was left behind.
- Heat 1 tbsp. of butter. Add the marinade + leftover chicken juice, 4tbsp of teriyaki sauce and cornflour slurry. Once the marinade and sauce has thickened up add honey and the spicy sauce. Check the consistency of the sauce.
- Add the grilled chicken and coat it evenly with the sauce. Let it cook for another 2 mins so that the flavour of the glaze gets incorporated into the chicken.
